Inside the Sommelier's Vault: 900 Labels Under the Dining Room

Beneath the dining room sits a cellar that took eleven years to build — museum Burgundy, first-release Grange and a locker system that lets guests bank their own bottles between visits.

How the vault was built

The cellar began as a builder's mistake — a basement dug deeper than the plans called for. Eleven years later it holds just over nine hundred labels at 14°C and 70% humidity, organised not by region but by drinking window, so the list is always answering the question 'what is ready tonight'.

The collection leans Australian and French: thirty years of Grange and Hill of Grace verticals, a serious Burgundy wall, grower Champagne by the case, and a fortified cellar that pays for the rest.

The museum shelf

The museum shelf is exactly that — bottles kept for significance rather than margin. A 1971 Grange, a 1985 Richebourg, first-release Cloudy Bay. They are for sale, but the sommelier interviews the buyer first; some bottles deserve witnesses.

Members of the VIP register receive first allocation on new museum acquisitions — typically six bottles a year, offered by telephone before they reach the list.

Private lockers

Seventy-two climate-controlled lockers let guests bank personal bottles in the house cellar — restaurant wines bought tonight and saved for an anniversary, auction cases kept at perfect humidity, or a working collection decanted to order.

Locker rental includes cellarage, catalogue and the standing option to have any bottle carried up and served with twenty minutes' notice. Coral and Noir members hold lockers without charge; the remaining cells rent annually through the concierge.

A cellar is a library where every book is also a clock — the whole art is opening the right one at the right hour.

Tastings and tours

The vault hosts a seated tasting every Thursday at 17:00 — eight guests, four wines, one theme, conducted by candlelight between the racks. Tickets are $85 and include the evening's opening pour in the dining room afterwards.

Corkage is $65 per bottle, waived for locker clients and for bottles not represented on our list. Two bottles per table at dinner.

They are designed for curiosity rather than expertise — the format is conversational and no knowledge is assumed beyond a preference for what you like.

The list doubles as a retail cellar — any bottle may be purchased to go at list price less ten per cent, with duty arrangements for interstate guests.
