Eleven courses charted along the Queensland shoreline — Mooloolaba prawns, Moreton Bay bugs and Atherton Tablelands produce, sequenced by our chef and paired by the sommelier tableside.
Our degustation is rebuilt every morning around the day's landings — line-caught coral trout, hand-dived scallops and oysters opened to order. Each course arrives with its own tableside ritual: broth poured from a heated carafe, salt crusts cracked open, sauces finished over a live flame.
Guests may add a private gaming interlude between courses — a dedicated croupier hosts a twenty-minute salon session while the kitchen resets. It is the signature rhythm of Coastal Eats: plate, play, repeat.
A structured progression from raw bar to wood-fired mains, finishing with the gold-leaf dessert and a digestif trolley.
Seven pours matched from a 900-label cellar, including museum vintages available nowhere else in Queensland.
An optional mid-menu salon session with a private croupier — chips and tasting notes delivered to your table.
Fourteen stools facing the open kitchen, where the brigade plates each course within arm's reach of your glass.
Ninety per cent of the menu travels under 200 kilometres — reef fish, tablelands dairy and native botanicals.
Chauffeured departure, cellared purchases and next-morning pastry delivery arranged before you leave.
Between the seventh and eighth courses, guests of the degustation may step into a curtained salon for a private round of baccarat or roulette. Your table is held, your glass is topped, and the kitchen times the next course to your final hand.

The degustation is a tide chart — you do not choose the dishes, you surrender to where the coast takes you.
Allow three to three and a half hours for the full eleven courses, plus any salon interludes. The kitchen can compress the arc to two and a half hours for guests with evening commitments — mention it when booking.
Yes. Pescatarian, vegetarian and most allergy profiles are rebuilt course-by-course with 48 hours' notice. The menu is seafood-led, so strict vegan requests are handled case by case by the chef.
Not at all — it is an optional signature of the house. Roughly half our degustation guests take the interlude; the rest move straight through the menu.
Smart elegant after 18:00 — jackets preferred for gentlemen in the salon, though the dining room is relaxed coastal refinement. Thongs and swimwear are not permitted at dinner.
Degustation seatings release thirty days ahead and the chef's counter sells first — tell our concierge your preferred evening and we will hold the tide for you.
